WINE TASTING AT OUR RELAIS

The tasting phase is certainly more interesting, this section will talk about serving temperature, choice of approach and tasting glass.
Firstly, the glass is never filled, but filled to about one third of its capacity, to allow sufficient aeration and a large development of perfumes. After observing the clarity and the color (items that already say a lot about the quality of a wine), bring the cup to stand by holding the nose and breathe gently without disturbing the wine. This allows us to capture the scents more immediate and direct. You can repeat the operation after shaking the contents of the glass lightly with a rotary movement to "liberate" the deeper flavors of the wine.
Now it's time to drink. Sip a small amount of wine, holding it in his mouth a few seconds to capture the flavors (sweet, bitter, salty and sour). After swallowing, the aromas are perceived by postnasal, and can then grasp subtle nuances and aftertaste.
However, we believe that these procedures should not be a ritual too hard, but that should be taken to the extent that they help us to appreciate a wine. The substance actually boils down to this: look, smell, taste.
The service includes many variants, but we will limit ourselves to proposals that have so far had the most success, ie the proposals that have a very good value for money.

With our first sommelier to guide you in this wonderful experience, you can combine four traditional Umbrian and Tuscan wines along with tasting of local products in accompaniment.

With your distinguished sommelier to guide you, you'll match four traditional Umbrian-Tuscan wines with a luscious spread of locally sourced produce. A sample tasting may include:


• 1 glass of white wine Bianco doc. Orvieto L'Origine accompanied by accompanied by small sandwich of fresh salami and mixed salad
• 1 glass of white wine Poggio Canneto dell'Azienda Agricola Carini accompanied by cheese pizza with ham and cheese
• 1 glass of red wine Montefalco Antonelli tartar of beef served by the spoon
• 1 glass of dessert with wine Dulcis Lungarotti accompanied by "mascarpone" cake and strawberries with and balsamic vinegar


• 1 glass of white wine Bianco doc. Orvieto L'Origine accompanied by tartare of beef served by the spoon
• 1 glass of white wine Poggio Canneto dell'Azienda Agricola Carini accompanied by Chap of veal (finger food) and peas
• 1 glass of red wine Montefalco Antonelli accompanied by small sandwich of smoked capon and mixed salad
• 1 glass of dessert wine Sagrantino Passito cantina Moretti Omero accompanied by "mascarpone" cake and strawberries with and balsamic vinegar
